A simple, savory skillet meal combining ground beef, cabbage, and a cheesy Frito topping for a hearty dinner.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups shredded cabbage
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese, divided
  • 2 cups Fritos corn chips

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
  4. Add the shredded cabbage to the skillet. Cook, stirring occasionally, until the cabbage begins to wilt, about 5 to 7 minutes.
  5. In a small bowl, whisk together the cream of mushroom soup and milk until smooth. Pour the soup mixture over the cabbage and beef. Stir to combine.
  6. Bring the mixture to a simmer. Reduce the heat to low, cover the skillet, and cook for 10 minutes, stirring halfway through, until the cabbage is tender.
  7. Stir in 1/2 cup of the shredded cheddar cheese until melted.
  8. Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the mixture. Top evenly with the Fritos corn chips.
  9. Cover the skillet again and cook for 2 to 3 minutes, or until the cheese is melted. Serve immediately directly from the skillet.

Notes

  • For a lower-carb option, substitute the Fritos with crushed pork rinds or serve the beef and cabbage mixture without the chip topping.
  • You can substitute ground turkey or ground chicken for the ground beef.
  • If you prefer a saucier dish, add 1/4 cup of water or beef broth when adding the soup mixture.
