Make tender, fluffy potatoes with a golden, crisp exterior using simple skillet frying methods. This recipe focuses on achieving diner-style texture.

Ingredients

Scale
  • 2 large Russet potatoes, peeled and thinly sliced (about 1/8 inch thick)
  • 1 medium yellow onion, thinly sliced
  • 3 tablespoons unsalted butter
  • 2 tablespoons bacon grease or vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Soak the sliced potatoes in cold water for at least 30 minutes. Drain them well and pat them completely dry with paper towels. This step helps achieve crispiness.
  2. Heat the butter and bacon grease (or oil) in a large, heavy-bottomed skillet over medium heat until the butter foams.
  3. Add the dried potatoes to the hot fat in a single layer. Do not overcrowd the pan; cook in batches if necessary.
  4. Cook undisturbed for 8 to 10 minutes until the bottoms are golden brown and crisp.
  5. Flip the potatoes and cook for another 5 minutes until they start to soften.
  6. Add the sliced onions to the skillet. Stir everything together gently.
  7. Reduce the heat to medium-low. Cover the skillet and cook for 5 to 7 minutes, allowing the potatoes to steam slightly and become tender inside.
  8. Remove the lid. Increase the heat back to medium. Cook uncovered for 3 to 5 minutes, stirring occasionally, until the onions are soft and the potatoes reach your desired level of crispness.
  9. Season with salt, pepper, and garlic powder. Stir once more and serve immediately.

Notes

  • For extra crispness, you can par-boil the potato slices for 3 minutes before drying and frying.
  • Using a mix of butter and bacon grease adds superior flavor to the final product.
  • Do not stir the potatoes too often during the initial frying stages; let them sit to form a crust.
