Enjoy these Baja-style Fish Tacos, featuring crispy battered fish topped with a zesty, creamy Cilantro Coleslaw. This recipe brings back bright, fresh flavors and a satisfying crunch to your table.

Ingredients

Scale
  • 1 lb white fish fillets (like cod or tilapia), cut into strips
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1/2 cup cold beer or sparkling water
  • Vegetable oil for frying
  • 12 small corn or flour tortillas
  • For the Cilantro Coleslaw:
  • 2 cups shredded cabbage mix
  • 1/2 cup mayonnaise
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the coleslaw: In a medium bowl, whisk together the mayonnaise, lime juice, cilantro, sugar, salt, and pepper.
  2. Add the shredded cabbage to the dressing. Toss well to coat completely. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  3. Prepare the fish batter: In a shallow dish, whisk together the flour, salt, pepper, and chili powder. Slowly whisk in the cold beer or sparkling water until just combined. Do not overmix; a few lumps are fine.
  4. Heat about 1 inch of vegetable oil in a deep skillet to 375°F (190°C).
  5. Dip each fish strip into the batter, letting the excess drip off.
  6. Carefully place the battered fish into the hot oil, working in batches to avoid crowding the pan. Fry for 3 to 4 minutes per side, until golden brown and cooked through.
  7. Remove the fish with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
  8. Warm the tortillas according to package directions.
  9. Assemble the tacos: Place a piece of fried fish in each warm tortilla. Top generously with the chilled Cilantro Coleslaw. Serve immediately.

Notes

  • Richard suggests using a mix of cod and tilapia for the best texture.
  • If you prefer grilled fish, season the strips with lime juice, cumin, and paprika before cooking on a hot grill.
  • Make sure your beer or sparkling water is very cold for the crispiest batter.
