This Everything Bagel Breakfast Casserole is a savory, make-ahead dish perfect for busy mornings. It combines the classic flavors of an everything bagel with a hearty breakfast casserole, offering a comforting and delicious start to your day.

Ingredients

Scale
  • 6 everything bagels, cut into 1-inch cubes
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup cream cheese, cut into small pieces

Instructions

  1. Spread the bagel cubes in a single layer on a baking sheet. Bake at 350°F (175°C) for 10-12 minutes, or until lightly golden and toasted. Let cool.
  2. In a large bowl, combine the toasted bagel cubes, cooked sausage, chopped onion, and chopped bell pepper.
  3. In a separate bowl, whisk together the eggs, milk, salt, and pepper.
  4. Pour the egg mixture over the bagel mixture and toss gently to combine.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Dot the top with pieces of cream cheese and sprinkle with shredded cheddar cheese.
  7. Cover with aluminum foil and refrigerate for at least 4 hours, or preferably overnight.
  8. Preheat your oven to 350°F (175°C).
  9. Remove the foil and bake for 40-50 minutes, or until the casserole is set and golden brown.
  10. Let stand for 10 minutes before serving.

Notes

  • You can substitute any breakfast meat for the sausage.
  • For a vegetarian option, omit the sausage and add extra vegetables like mushrooms or spinach.
  • Add a dash of hot sauce to the egg mixture for a little kick.
