This is our go-to recipe for the best homemade egg salad. It is creamy, flavorful, and perfect for quick lunch sandwiches or as a simple picnic side dish. You can make this easy egg salad filling in minutes.

Ingredients

Scale
  • 12 large eggs, hard-boiled and peeled
  • 1/2 cup mayonnaise (use your favorite creamy dressing for egg salad)
  • 2 tablespoons Dijon mustard
  • 1/4 cup finely chopped celery
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the peeled, hard-boiled eggs in a large bowl.
  2. Roughly chop the eggs. For a creamy texture, mash about half the eggs with a fork until smooth, and leave the other half slightly chunkier.
  3. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, white vinegar, salt, and pepper until smooth. This is your creamy dressing for egg salad.
  4. Add the chopped celery, fresh dill, and chives to the chopped eggs.
  5. Pour the dressing mixture over the eggs and vegetables.
  6. Gently fold all ingredients together until just combined. Do not overmix, or the salad will become too mushy.
  7. Taste the egg salad and adjust salt and pepper if needed.
  8. Serve immediately on toasted bread for an easy egg salad sandwich, or chill for later use in meal prep.

Notes

  • For the best flavor, chill the finished egg salad for at least 30 minutes before serving. This allows the flavors to meld together.
  • If you want a tangier flavor, add a small squeeze of fresh lemon juice to the dressing mixture.
  • This recipe is great for using up hard-boiled eggs you have on hand.
  • Store leftover egg salad in an airtight container in the refrigerator for up to four days.
