Make simple peanut butter cookies using basic pantry staples. This quick recipe yields soft, melt in your mouth cookies perfect for any day.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. In a medium bowl, mix the peanut butter and sugar together until combined.
  3. Add the egg and vanilla extract. Mix well until the dough comes together.
  4. Stir in the baking soda and salt until just incorporated.
  5. Scoop the dough into balls, about 1 inch in diameter, and place them two inches apart on the prepared baking sheets.
  6. Use a fork to press down on each cookie ball, creating a crisscross pattern. This helps them bake evenly.
  7. Bake for 10 to 12 minutes, or until the edges are lightly golden. Do not overbake if you want soft cookies.
  8. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • For a fudgier cookie, slightly reduce the sugar to 3/4 cup.
  • If your cookies spread too much while baking, chill the dough for 15 minutes before forming the balls next time.
  • This recipe makes perfect chewy peanut butter cookies without needing to chill the dough beforehand.
