Make authentic Thai Mango Sticky Rice at home with this simple, step-by-step recipe focusing on perfectly cooked glutinous rice and a creamy coconut sauce.

Ingredients

Scale
  • 1 cup glutinous sweet rice (sticky rice)
  • 1 cup water (for soaking rice)
  • 1 cup full-fat coconut milk
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 cup extra coconut milk (for topping)
  • 1 tablespoon sugar (for topping)
  • Pinch of salt (for topping)
  • 2 ripe mangoes, peeled and sliced

Instructions

  1. Rinse the sticky rice under cold water until the water runs clear. Soak the rice in 1 cup of fresh water for at least 4 hours, or preferably overnight.
  2. Drain the soaked rice completely. Steam the rice for 20 to 25 minutes until tender and cooked through. Alternatively, cook the rice in a rice cooker with 3/4 cup of water until done.
  3. While the rice cooks, prepare the sweet coconut sauce. In a small saucepan, combine 1 cup coconut milk, 1/2 cup sugar, and 1/2 teaspoon salt. Heat over medium heat, stirring until the sugar and salt dissolve. Do not boil.
  4. Transfer the hot, cooked sticky rice to a bowl. Pour about two-thirds of the warm sweet coconut sauce over the rice. Stir gently to combine. Cover the bowl and let the rice absorb the liquid for 20 minutes.
  5. Prepare the topping sauce. In a separate small saucepan, combine the remaining 1/4 cup coconut milk, 1 tablespoon sugar, and a pinch of salt. Heat until dissolved. This sauce should be slightly thicker than the main sauce.
  6. To serve, place a portion of the sweetened sticky rice on a plate. Arrange slices of fresh, ripe mango next to the rice. Drizzle the reserved creamy topping sauce over the rice and mango.

Notes

  • Use only glutinous sweet rice for this recipe; regular white rice will not achieve the correct texture.
  • Ensure your mangoes are very ripe for the best flavor contrast with the salty-sweet rice.
  • If you do not have a steamer, you can cook the soaked rice in a rice cooker using less water than usual.
