This Easy Crock Pot Salsa Chicken delivers tender, flavorful shredded chicken perfect for tacos, burritos, or bowls. It requires minimal effort—just dump the ingredients in your slow cooker and let it cook.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 (16 ounce) jar salsa (your favorite kind)
  • 1 packet (1 ounce) taco seasoning mix
  • 1 (15 ounce) can black beans, rinsed and drained (Optional)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Pour the entire jar of salsa over the chicken.
  3. Sprinkle the taco seasoning evenly over the top. If using, add the rinsed black beans now.
  4. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  5. Remove the chicken breasts from the slow cooker. Shred the chicken using two forks.
  6. Return the shredded chicken to the slow cooker and stir well to coat it thoroughly with the salsa sauce.
  7. Serve immediately over rice, in tortillas, or as desired.

Notes

  • For extra flavor, add a teaspoon of cumin or chili powder with the taco seasoning.
  • If the sauce seems too thin after shredding, remove the lid for the last 30 minutes of cooking on HIGH to allow some liquid to evaporate.
  • This recipe freezes beautifully for future quick meals.
