Make simple, moist Greek chicken meatballs and serve them with a light, creamy lemon-dill sauce for a quick weeknight dinner.

Ingredients

Scale
  • 1 pound ground chicken
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup finely crumbled feta cheese
  • 1 large egg, lightly beaten
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for baking)
  • 1/2 cup plain Greek yogurt (full fat recommended for creaminess)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon water (for sauce thinning)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, crumbled feta, egg, dill, oregano, garlic powder, salt, and pepper. Mix gently with your hands until just combined; do not overmix.
  3. Roll the mixture into uniform, small meatballs (about 1.5 inches in diameter). You should get about 18-20 meatballs.
  4. Place the meatballs on the prepared baking sheet and brush lightly with olive oil.
  5. Bake for 18 to 20 minutes, or until the internal temperature reaches 165°F (74°C) and they are lightly browned.
  6. While the meatballs bake, prepare the creamy sauce: In a small bowl, whisk together the Greek yogurt, lemon juice, and lemon zest until smooth. Add water, one teaspoon at a time, until you reach your desired drizzling consistency.
  7. Remove the meatballs from the oven. Let them rest for 5 minutes.
  8. Serve the warm meatballs immediately, drizzled generously with the lemon-dill yogurt sauce.

Notes

  • For extra moisture, you can gently simmer the baked meatballs in a small amount of chicken broth for 5 minutes before adding the sauce.
  • If you prefer a richer sauce, substitute sour cream for the Greek yogurt.
  • These meatballs pair well with rice pilaf or a simple cucumber salad.
