Make a quick, creamy, high-protein Alfredo sauce substitute using cottage cheese as the base. This recipe is simple to prepare and ready fast.

Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 1/4 cup milk (or preferred liquid)
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese (optional, for flavor)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Place the cottage cheese, milk, minced garlic, Parmesan cheese (if using), salt, pepper, and nutmeg into a blender or food processor.
  2. Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
  3. If the sauce is too thick, add milk, one tablespoon at a time, blending until you reach your desired consistency.
  4. Heat the sauce gently in a small saucepan over low heat for 2-3 minutes, stirring constantly, until warmed through. Do not boil.
  5. Pour the warm sauce over your cooked pasta and serve immediately.

Notes

  • Use the water you cooked your pasta in to thin the sauce if you want extra starchiness to help it cling to the noodles.
  • For a richer flavor, use whole milk or a splash of heavy cream instead of low-fat milk.
  • If you do not have a blender, you can use an immersion blender, but you may need to blend longer to break down the curds completely.
