Ingredients
Scale
6 medium apples (Granny Smith or Fuji recommended)
6 wooden sticks
2 cups granulated sugar
1 cup water
1/2 cup light corn syrup
1 teaspoon red food coloring (optional)
1/4 teaspoon white vinegar
Instructions
Wash and thoroughly dry the apples. Remove any wax by briefly dipping them in boiling water, then dry them completely. Insert a wooden stick firmly into the core of each apple.
Combine sugar, water, and corn syrup in a heavy-bottomed saucepan. Stir over medium heat until the sugar dissolves.
Stop stirring once the mixture boils. Add the food coloring and vinegar, if using.
Cook the syrup without stirring until it reaches 300 degrees Fahrenheit (hard crack stage) on a candy thermometer. This usually takes 15 to 20 minutes.
Remove the pan from the heat immediately when it reaches 300 degrees Fahrenheit. Let the bubbles subside for about one minute before dipping.
Tilt the pan slightly. Dip each apple into the hot syrup, rotating it quickly to coat evenly. Lift the apple and let excess syrup drip off.
Place the coated apples on a baking sheet lined with parchment paper or a silicone mat.
Allow the candy coating to cool and harden completely before serving, about 30 minutes.
Notes
For a non-stick surface, lightly spray your parchment paper with cooking spray before setting the apples down.
If the coating thickens too much while dipping, return the pan to low heat briefly to warm it slightly, but do not let it boil again.
Use firm apples that hold up well to the hot syrup.
