Ingredients
Scale
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups powdered sugar
1 egg
1 teaspoon vanilla extract
1/4 teaspoon peppermint extract
2 tablespoons milk
2 1/2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon salt
4 ounces semi-sweet chocolate, melted
1 teaspoon vegetable oil
1/2 teaspoon peppermint extract
Instructions
In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
Beat in the egg, vanilla extract, and peppermint extract.
In a separate small bowl, whisk together the milk and 1/4 teaspoon peppermint extract. Add this to the butter mixture alternately with the flour, beginning and ending with flour. Mix until just combined.
In a small bowl, whisk together the flour, cocoa powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
On a lightly floured surface, roll out one disk of dough to about 1/4 inch thickness.
Use a cookie cutter to cut out shapes. Place the cookies on the prepared baking sheets.
Bake for 8-10 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
In a small bowl, combine the melted semi-sweet chocolate and vegetable oil. Stir in 1/2 teaspoon peppermint extract.
Dip the cooled cookies into the chocolate mixture, letting any excess drip off.
Place the dipped cookies back on the wire rack to allow the chocolate to set.
Notes
For a more intense mint flavor, you can add an extra drop of peppermint extract to the chocolate coating.
Ensure your butter is truly softened, not melted, for the best cookie texture.
Chilling the dough is crucial to prevent the cookies from spreading too much during baking.
