Ingredients
Scale
2 cups cooked, shredded chicken
1/2 cup cream cheese, softened
1/4 cup salsa
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon salt
12 corn tortillas
2 tablespoons vegetable oil or cooking spray
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with a wire rack set over the sheet.
In a medium bowl, combine the shredded chicken, softened cream cheese, salsa, chili powder, cumin, and salt. Mix until the filling is uniform.
Warm the corn tortillas in the microwave for 20 to 30 seconds to make them pliable. This prevents cracking.
Place about 2 tablespoons of the chicken mixture near one edge of a warm tortilla. Roll the tortilla tightly around the filling.
Secure the rolled taquito seam-side down on the prepared baking sheet or wire rack. If using a baking sheet without a rack, secure the seam with a toothpick inserted lengthwise through the roll.
Lightly brush or spray the tops of the taquitos with vegetable oil. This helps them crisp up.
Bake for 12 to 15 minutes. Carefully flip the taquitos over.
Bake for another 10 to 15 minutes, or until the taquitos are golden brown and crispy.
Remove toothpicks before serving. Serve immediately with your preferred toppings.
Notes
Using a wire rack set over the baking sheet allows air to circulate underneath, which helps the bottoms become crispier.
If your tortillas crack when rolling, warm them longer.
For extra crispiness, you can lightly spray the taquitos again halfway through the second baking time.
