Transform your breakfast or brunch with these delightful Crispy Latke Waffles. This recipe combines the comforting flavors of traditional potato latkes with the fun, crispiness of waffles. It’s a unique and delicious way to enjoy a classic dish.

Ingredients

Scale
  • 2 cups grated potatoes (about 2 large potatoes), squeezed dry
  • 1/2 cup finely chopped onion
  • 2 large eggs, lightly beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon baking powder
  • Vegetable oil, for cooking

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a medium bowl, combine the grated potatoes, chopped onion, beaten eggs, flour, salt, pepper, and baking powder. Mix until just combined.
  3. Lightly brush the waffle iron grids with vegetable oil.
  4. Pour about 1/2 cup of the potato mixture onto the hot waffle iron, spreading it evenly.
  5. Close the waffle iron and cook for 5-7 minutes, or until golden brown and crispy.
  6. Carefully remove the latke waffle and place it on a wire rack to keep it crisp while you cook the remaining batter.
  7. Repeat with the remaining batter, adding more oil to the waffle iron as needed.
  8. Serve hot with your favorite toppings.

Notes

  • Ensure your grated potatoes are as dry as possible for maximum crispiness.
  • You can add a pinch of nutmeg or a tablespoon of finely chopped chives to the batter for extra flavor.
  • Serve with sour cream, applesauce, or even a dollop of smoked salmon for a savory treat.
