This recipe brings the decadent flavor of crème brûlée into a make-ahead French toast bake. Bread soaks in a rich custard, then bakes up golden with a sweet, caramelized bottom layer. It is perfect for a special brunch.

Ingredients

Scale
  • 1 loaf (about 1 pound) challah or brioche bread, cut into 1-inch cubes
  • 6 large eggs
  • 2 cups heavy cream
  • 1/2 cup granulated sugar, plus extra for topping
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Arrange the bread cubes evenly in the prepared dish.
  3. In a large bowl, whisk together the eggs, heavy cream, 1/2 cup sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  4. Pour the custard mixture evenly over the bread cubes. Gently press the bread down to make sure it absorbs the liquid.
  5. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
  6. Preheat your oven to 350 degrees F (175 degrees C).
  7. Remove the plastic wrap. Sprinkle a generous, even layer of granulated sugar over the top of the French toast bake.
  8. Bake for 40 to 50 minutes, or until the custard is set and the top is deeply golden brown and caramelized.
  9. Let it cool slightly before slicing and serving.

Notes

  • Using day-old bread works best for soaking up the custard.
  • For the best caramel top, use a kitchen torch after baking to quickly melt and brown the final sugar layer, mimicking true crème brûlée.
  • Serve immediately after torching for the perfect crackle.
