Create a rich, smooth Creamy White Cheddar Chicken. This recipe focuses on achieving a velvety cheese sauce, free from any graininess, reminiscent of comforting flavors from our travels.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces sharp white cheddar cheese, freshly grated
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Brown the chicken on all sides; remove and set aside.
  3. Reduce heat to medium. Add the onion to the skillet and cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for 1 minute until fragrant.
  5. Sprinkle the flour over the onions and garlic. Stir constantly for 1 minute to cook out the raw flour taste.
  6. Slowly whisk in the chicken broth until smooth. Bring the mixture to a simmer, stirring until the sauce thickens slightly.
  7. Reduce the heat to low. Stir in the heavy cream and Dijon mustard. Do not let the sauce boil after adding the cream.
  8. Remove the skillet from the heat. Gradually add the grated white cheddar cheese, stirring constantly until the cheese is fully melted and the sauce is completely smooth.
  9. Stir in the nutmeg. Taste and adjust seasoning with salt and pepper.
  10. Return the cooked chicken to the skillet. Stir to coat completely in the creamy sauce. Heat through gently before serving.

Notes

  • Always grate your cheese fresh; pre-shredded cheese contains anti-caking agents that prevent smooth melting.
  • Remove the skillet from the heat before adding the cheese to prevent the sauce from breaking or becoming grainy.
  • Stir the cheese in slowly, adding small handfuls at a time.
