Ingredients
Scale
1 tablespoon olive oil
1 small yellow onion, finely chopped
2 cloves garlic, minced
1 cup orzo pasta
1/2 cup sun-dried tomatoes packed in oil, drained and chopped
3 cups vegetable or chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tablespoon fresh lemon juice
Salt and black pepper to taste
Fresh basil for garnish
Instructions
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for one minute until fragrant.
Stir in the orzo pasta and toast for 2 minutes, stirring constantly.
Add the chopped sun-dried tomatoes and the broth. Bring the mixture to a simmer.
Reduce the heat to medium-low, cover, and cook for 12-15 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
Remove the skillet from the heat. Stir in the heavy cream and grated Parmesan cheese until the mixture is smooth and creamy.
Stir in the fresh lemon juice. Season with salt and pepper to your liking.
Serve immediately, garnished with fresh basil.
Notes
Using sun-dried tomatoes packed in oil gives you a deeper flavor than dry-packed ones.
If the orzo seems too thick, add a splash more broth or water when stirring in the cream.
Richard always says the lemon juice is the secret to cutting through the richness.
