Create a rich and flavorful Creamy Sun-Dried Tomato Chicken. This recipe focuses on developing a luxurious sauce that perfectly coats the tender chicken. You will learn the simple steps to achieve that beautiful emulsion.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut in half horizontally
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken for 4-5 minutes per side until golden brown and cooked through. Remove the chicken and set it aside.
  4. Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  5. Add the minced garlic and chopped sun-dried tomatoes. Cook for 1 minute until fragrant.
  6. Pour in the chicken broth. Scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  7. Lower the heat to low. Stir in the heavy cream and Italian seasoning. Let the sauce warm through gently; do not let it boil.
  8. Slowly sprinkle in the grated Parmesan cheese while whisking constantly until the sauce thickens slightly and becomes smooth. This builds the creamy texture.
  9. Taste the sauce and add red pepper flakes if you desire a little heat. Adjust salt and pepper as needed.
  10. Return the cooked chicken to the skillet. Spoon the creamy sauce over the chicken pieces.
  11. Heat for 1-2 minutes until the chicken is heated through. Serve immediately.

Notes

  • For the best flavor, use sun-dried tomatoes preserved in oil. Pat them dry slightly before chopping.
  • Whisk the Parmesan cheese in slowly over low heat to prevent the sauce from breaking or becoming grainy.
  • This dish pairs wonderfully with pasta, rice, or crusty bread to soak up the extra sauce.
