Ingredients

Scale
  • 4 Boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 1/2 cup shredded Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
  2. In a medium bowl, combine the softened cream cheese, dried spinach, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well until fully incorporated. This is your rich filling.
  3. Take each chicken breast and carefully cut a deep pocket into the thickest side of the meat. Do not cut all the way through.
  4. Gently spoon the spinach and cheese mixture evenly into the pockets of the four chicken breasts. You want them packed but secure.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat.
  6. Sear the stuffed chicken breasts for about 2-3 minutes per side until lightly browned. This adds color and flavor.
  7. Transfer the skillet to the preheated oven.
  8. Bake for 20 to 25 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit and the juices run clear.
  9. Remove from the oven and let the chicken rest for 5 minutes before serving.

Notes

  • Squeezing all the excess water from the thawed spinach is crucial for a thick filling.
  • You can secure the opening of the chicken breasts with toothpicks if the filling tries to escape during cooking.
  • Serve this alongside roasted potatoes or a fresh green salad for a complete meal.
