Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, chopped
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme

Instructions

  1. In a shallow dish, whisk together the flour, salt, pepper, paprika, and garlic powder. Dredge each chicken breast thoroughly in the flour mixture, shaking off any excess.
  2. Heat the olive oil and butter in a large, deep skillet over medium-high heat.
  3. Carefully place the coated chicken into the hot skillet. Cook for 5-7 minutes per side until golden brown. Remove the chicken and set it aside on a plate.
  4. Reduce the heat to medium. Add the chopped onion to the skillet and cook, stirring, until soft, about 3 minutes.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream, Worcestershire sauce, and thyme.
  6. Bring the gravy to a simmer. If you prefer a thicker gravy, mix 1 tablespoon of flour with 2 tablespoons of cold water to create a slurry, then whisk it into the simmering gravy until it thickens to your liking.
  7. Return the browned chicken breasts to the skillet. Spoon the gravy over the chicken.
  8. Cover the skillet, reduce the heat to low, and let it simmer gently for 15-20 minutes, or until the chicken is cooked through and tender.
  9. Serve the chicken immediately, smothered in the rich gravy.

Notes

  • For an extra layer of flavor, you can use chicken broth that is low in sodium.
  • If you like your gravy very thick, use two tablespoons of flour in the slurry mixture instead of one.
  • Taste the gravy before adding salt, as the broth often contains enough sodium.
