This recipe delivers a rich, smooth, and classic American potato salad with a perfectly balanced, creamy dressing.

Ingredients

Scale
  • 3 lbs Yukon Gold potatoes, peeled and quartered
  • 1 cup mayonnaise
  • 1/2 cup sweet pickle relish
  • 1/4 cup yellow mustard
  • 1/4 cup apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1 tablespoon dried sweet pickle juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large eggs, hard-boiled and chopped
  • 1 cup celery, finely chopped
  • 1/2 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Place the quartered potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15 to 20 minutes. Do not overcook.
  2. Drain the potatoes immediately and let them cool slightly for about 10 minutes. Place the warm potatoes in a large bowl.
  3. While the potatoes are warm, gently pour the apple cider vinegar over them. Toss lightly to coat. This step helps the potatoes absorb flavor. Let them cool completely to room temperature.
  4. In a separate medium bowl, whisk together the mayonnaise, sweet pickle relish, yellow mustard, sugar, pickle juice, salt, and pepper until smooth. This is your creamy dressing.
  5. Add the chopped hard-boiled eggs, celery, and red onion to the cooled potatoes.
  6. Pour the creamy dressing over the potato mixture. Fold gently until everything is evenly coated. Avoid mashing the potatoes.
  7. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  8. Before serving, taste and adjust seasoning if needed. Garnish with fresh parsley.

Notes

  • Use Yukon Gold potatoes for the best texture; they hold their shape well but remain creamy.
  • For a richer dressing, substitute 2 tablespoons of the mayonnaise with sour cream.
  • Chop your vegetables finely so they blend smoothly into the creamy base.
