Enjoy a creamy, high-protein vanilla pudding that tastes just like the comforting desserts you remember. We perfected this recipe to give you that smooth texture you crave without any chalkiness. It’s a sweet trip down memory lane.

Ingredients

Scale
  • 1/2 cup vanilla protein powder
  • 1/4 cup cornstarch
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 cups milk (dairy or non-dairy)
  • 1 cup heavy cream
  • 1 tablespoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together the protein powder, cornstarch, sugar, and salt.
  2. Gradually whisk in the milk until the mixture is smooth.
  3. Place the saucepan over medium heat. Stir constantly until the mixture thickens considerably and comes to a gentle boil. This takes about 5 to 8 minutes.
  4. Remove the pan from the heat. Stir in the heavy cream and vanilla extract.
  5. Pour the pudding into individual serving dishes or one large bowl.
  6. Press plastic wrap directly onto the surface of the pudding to prevent a skin from forming.
  7. Refrigerate for at least 4 hours, or until completely chilled and set.

Notes

  • Richard suggests tasting the mixture before boiling to confirm sweetness. Adjust sugar if needed.
  • We used a whey/casein blend for the best texture, but your favorite vanilla powder works well.
  • For an extra layer of flavor, add a tiny pinch of nutmeg with the dry ingredients.
