Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook until browned and cooked through. Remove chicken and set aside.
  4. Reduce heat to medium. Add minced garlic to the skillet and cook for about 1 minute until fragrant. Do not let the garlic burn.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  6. Stir in the heavy cream and Italian seasoning. Bring the mixture to a gentle simmer.
  7. Reduce heat to low. First, stir in the grated Parmesan cheese slowly until fully melted and the sauce thickens slightly.
  8. Next, add the shredded mozzarella cheese and stir until completely melted and incorporated, creating a smooth sauce. This order keeps the sauce from becoming grainy.
  9. Return the cooked chicken to the skillet. Toss to coat completely in the creamy sauce.
  10. Serve immediately, garnished with fresh parsley and extra Parmesan cheese.

Notes

  • We learned this technique in Florence; adding the Parmesan before the mozzarella melts the Parmesan smoothly first.
  • If the sauce seems too thick, add a splash more chicken broth.
  • Richard always prefers freshly grated Parmesan for the best melt.
