Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces to the skillet. Cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Do not let it burn.
  4. Pour in the chicken broth. Scrape up any browned bits from the bottom of the pan. Let the broth simmer for 1 minute.
  5. Stir in the heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Continue to cook, stirring often, until the sauce thickens slightly. This takes about 3-5 minutes. For a thicker sauce, simmer a little longer.
  6. Return the cooked chicken to the skillet. Toss gently to coat the chicken completely in the creamy garlic sauce.
  7. Heat through for 1-2 minutes.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • For a quicker heat-up, use pre-cut chicken pieces or thinner cuts.
  • To get the sauce to thicken faster, you can let the broth reduce more before adding the cream, or increase the heat slightly during the cream simmering stage. Remember to stir constantly.
  • If you prefer an even richer sauce, add a small pat of butter when you add the Parmesan cheese.
