Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine or chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Pat the shrimp dry and season lightly with salt and pepper.
  2. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  3. Add the shrimp and cook for 1-2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
  4. Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet.
  5. Add the minced garlic and cook for about 30 seconds until fragrant; do not let it brown.
  6. Pour in the white wine or broth, scraping up any browned bits from the bottom of the pan. Let this simmer and reduce slightly for 1 minute.
  7. Stir in the heavy cream. Bring the mixture to a gentle simmer.
  8. Whisk in the Parmesan cheese until the sauce thickens slightly and becomes smooth. This step creates the emulsion.
  9. Return the cooked shrimp to the skillet. Toss gently to coat them in the sauce.
  10. Remove the skillet from the heat. Stir in the fresh lemon juice and chopped parsley.
  11. Taste and adjust seasoning with salt and pepper if needed. Serve immediately.

Notes

  • For the best emulsion, make sure your cream is not boiling rapidly when adding the cheese. A gentle simmer works best.
  • If you prefer a tangier flavor, add a touch more lemon juice at the end.
  • Use fresh, high-quality garlic for the best aromatic base.
