Create a luxurious Creamy Garlic Butter Lobster Pasta that tastes just like a treasured memory. Follow the sauce timing closely to keep your lobster perfectly tender.

Ingredients

Scale
  • 1 pound lobster meat, cooked and chopped
  • 12 ounces linguine or fettuccine pasta
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve 1 cup of the pasta water before draining.
  2. While the pasta cooks, melt the butter in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and cook for about 1 minute until fragrant. Do not let the garlic brown.
  4. Pour in the white wine. Let it simmer and reduce by half, about 2 minutes.
  5. Reduce the heat to low. Stir in the heavy cream and let it warm through for 2 minutes.
  6. Stir in the Parmesan cheese until the sauce is smooth. Season with salt and pepper.
  7. Add the cooked lobster meat to the sauce. Cook gently for just 1 to 2 minutes to heat the lobster through. Avoid overcooking the lobster.
  8. Add the drained pasta to the skillet with the sauce. Toss everything to coat well.
  9. If the sauce seems too thick, add a splash or two of the reserved pasta water until you reach your desired consistency.
  10. Stir in the fresh parsley. Serve immediately.

Notes

  • Richard reminds you that the key to tender lobster is very little time in the warm sauce.
  • We always use fresh Parmesan cheese; the pre-grated kind does not melt as smoothly.
  • This dish tastes best when you eat it right away, savoring the moment.
