Ingredients
Scale
4 Boneless, skinless chicken breasts
1 tablespoon Olive oil
2 tablespoons Butter
4 cloves Garlic, minced
1/2 cup Chicken broth
1/2 cup Heavy cream
1/4 cup Parmesan cheese, grated
1 teaspoon Dried Italian seasoning
Salt, to taste
Black pepper, to taste
1 tablespoon Fresh parsley, chopped (for garnish)
Instructions
Pat the chicken breasts completely dry with paper towels. Season both sides generously with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Carefully place the chicken breasts in the hot skillet. Sear undisturbed for 5 to 7 minutes until a deep golden-brown crust forms. Do not move the chicken during this time.
Flip the chicken breasts. Reduce the heat to medium-low. Cook for another 5 to 7 minutes, or until the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and set aside on a plate. Cover loosely with foil to keep warm.
Add the butter to the same skillet over medium heat. Let it melt.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan with a wooden spoon. Let this simmer and reduce slightly for 2 minutes.
Stir in the heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
Remove the skillet from the heat. Whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Taste and adjust salt and pepper if needed.
Return the cooked chicken breasts to the skillet. Spoon the sauce over the chicken. Let the chicken warm through in the sauce for 1 minute.
Garnish with fresh parsley before serving immediately over your favorite side.
Notes
Ensure your chicken breasts are of similar thickness for even cooking. If they are very thick, consider pounding them slightly.
The sear is key to flavor; resist the urge to peek under the chicken too early.
