You can enjoy the sharp, pleasant flavor of Dijon mustard in this creamy chicken dish without it overpowering the chicken. This recipe brings a familiar comfort with a bright, tangy twist.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons Dijon mustard (use a smooth variety)
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley, chopped for garnish

Instructions

  1. Season both sides of the chicken breasts with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook for 5 to 7 minutes per side, until golden brown and cooked through. Remove the chicken and set it aside.
  4. Reduce the heat to medium. Add the minced shallot to the same skillet and cook until softened, about 2 minutes.
  5. Add the minced garlic and cook for 30 seconds until fragrant.
  6. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer and reduce slightly for 2 minutes.
  7. Stir in the heavy cream and Dijon mustard. Whisk until the sauce is smooth.
  8. Add the fresh thyme leaves to the sauce. Taste and adjust seasoning with salt and pepper if needed.
  9. Return the cooked chicken breasts to the skillet. Spoon the sauce over the chicken.
  10. Simmer gently for 1 to 2 minutes to heat the chicken through and allow the flavors to meld.
  11. Garnish with fresh parsley before serving.

Notes

  • If you prefer a slightly milder mustard flavor, start with 1.5 tablespoons and taste before adding the full 2 tablespoons.
  • Ensure your chicken reaches an internal temperature of 165°F (74°C) for food safety.
  • This sauce pairs wonderfully with mashed potatoes or steamed green beans.
