Make rich, creamy, restaurant-style creamed spinach quickly. This recipe delivers a velvety texture perfect for steak dinners or holidays.

Ingredients

Scale
  • 1 lb fresh spinach, washed and roughly chopped
  • 2 tablespoons unsalted butter
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese, cubed
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste

Instructions

  1. Blanch the fresh spinach in boiling water for 1 minute. Immediately transfer it to an ice bath to stop cooking. Squeeze out as much water as possible from the spinach and chop it coarsely.
  2. Melt the butter in a medium saucepan over medium heat. Add the minced shallot and cook until softened, about 2 minutes.
  3. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Whisk in the flour to create a roux. Cook for 1 minute, stirring constantly.
  5. Gradually whisk in the whole milk until the mixture is smooth. Bring to a simmer, stirring until the sauce thickens slightly.
  6. Stir in the heavy cream and cubed cream cheese until the cheese melts completely into the sauce.
  7. Add the nutmeg, salt, and pepper. Stir well.
  8. Fold in the squeezed, chopped spinach until it is fully coated and heated through.
  9. Taste and adjust seasoning before serving hot.

Notes

  • If you use frozen spinach, thaw it completely and squeeze out all excess liquid before adding it to the sauce.
  • For a richer flavor, substitute half of the whole milk with chicken or vegetable broth.
  • You can add a pinch of cayenne pepper for a slight background heat.
