Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup white chocolate chips
  • For the Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 1/2 cups powdered sugar
  • For the Drizzle:
  • 1/2 cup white chocolate chips
  • 1 tablespoon shortening or neutral oil

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the dried cranberries and white chocolate chips.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool completely in the pan on a wire rack.
  10. While the cake cools, prepare the frosting. In a bowl, beat the softened cream cheese and butter until smooth.
  11. Mix in the vanilla extract and salt.
  12. Gradually add the powdered sugar, beating until the frosting is light and creamy.
  13. Spread the frosting evenly over the cooled cake.
  14. For the drizzle, melt the white chocolate chips with shortening or oil in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  15. Drizzle the melted white chocolate over the frosting.
  16. Let the drizzle set before cutting the bars into squares.

Notes

  • For a more intense cranberry flavor, you can soak the dried cranberries in hot water for 10 minutes and then drain them before adding to the batter.
  • Ensure your butter and cream cheese are at room temperature for the smoothest frosting.
  • If you don’t have shortening for the drizzle, you can use a neutral oil like vegetable or canola oil.
  • Store the bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for longer storage.
