This recipe gives you a creamy, high-protein chicken salad using cottage cheese instead of mayonnaise. It is quick to make, perfect for healthy lunches, and great for meal prep.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 cup low-fat cottage cheese
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. Place the cooked, shredded chicken in a medium mixing bowl.
  2. Add the cottage cheese to the bowl. Use a fork to break up the cottage cheese slightly so it mixes more easily.
  3. Add the chopped celery, minced red onion, Dijon mustard, and apple cider vinegar to the bowl.
  4. Season with salt and pepper.
  5. Mix all ingredients together until the salad is well combined and creamy. You can blend a small portion of the mixture if you prefer a smoother texture.
  6. Stir in the fresh parsley, if using.
  7. Taste the salad and adjust salt or pepper as needed.
  8. Serve immediately, or chill for 30 minutes for better flavor melding. This is a fantastic sandwich filling idea or a great addition to your healthy sandwich recipes.

Notes

  • For a lower sodium option, use low-sodium cottage cheese and reduce added salt.
  • If you want a slightly sweeter flavor, add 1 tablespoon of finely chopped grapes.
  • This salad keeps well for up to four days, making it an excellent choice for easy meal prep salads.
  • Serve this protein packed lunch over lettuce greens for a low carb chicken salad option.
