Ingredients
Scale
1 cup low-fat cottage cheese
1 cup cooked, shredded chicken breast
1/2 cup buffalo wing sauce (your preferred heat level)
1/4 cup plain Greek yogurt or sour cream
1/4 cup shredded cheddar or Monterey Jack cheese
1 teaspoon ranch seasoning mix (optional)
Instructions
Place the cottage cheese into a food processor or high-speed blender. Blend until the mixture is completely smooth and resembles cream cheese. Scrape down the sides as needed.
Add the shredded chicken, buffalo sauce, Greek yogurt (or sour cream), ranch seasoning (if using), and half of the shredded cheese to the blender.
Pulse or blend until all ingredients are combined and the dip is creamy. Do not over-blend if you prefer some texture from the chicken.
Transfer the dip mixture to a small oven-safe baking dish.
Top with the remaining shredded cheese.
Bake at 375°F (190°C) for 10 to 15 minutes, or until the dip is heated through and the cheese on top is melted and bubbly.
Serve hot with celery sticks, carrots, or tortilla chips.
Notes
For the smoothest texture, ensure your cottage cheese is fully blended before adding other ingredients.
If you do not have a blender, you can mash the cottage cheese thoroughly with a fork, though the texture will be slightly less smooth.
This dip is excellent for meal prepping; store leftovers in the refrigerator for up to four days.
