Ingredients
Scale
1 cup pineapple juice
1/2 cup light brown sugar, packed
1/4 cup white vinegar
2 tablespoons ketchup
1 tablespoon soy sauce
1 teaspoon ground ginger
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1 tablespoon cornstarch
2 tablespoons cold water
Instructions
Combine the pineapple juice, brown sugar, white vinegar, ketchup, soy sauce, ground ginger, garlic powder, and onion powder in a small saucepan.
Heat the mixture over medium heat, stirring until the sugar dissolves and the sauce begins to simmer.
In a separate small bowl, whisk together the cornstarch and cold water to create a slurry.
Slowly pour the cornstarch slurry into the simmering sauce while whisking constantly.
Continue to cook and stir for 1 to 2 minutes, or until the sauce thickens enough to coat the back of a spoon.
Remove the sauce from the heat and let it cool completely. The sauce will thicken further as it cools.
Transfer the sauce to an airtight container for storage.
Notes
For a tangier sauce, add 1 teaspoon of extra white vinegar after the sauce has cooled.
For a sweeter sauce, add 1 tablespoon of extra brown sugar during the initial heating stage.
This sauce works well as a glaze; brush it onto chicken or pork during the last 10 minutes of cooking.
