Ingredients
Scale
1 small flour tortilla (about 6 inches)
1 large egg
1 slice American cheese
1 cooked sausage patty or 2 slices cooked bacon
1 teaspoon butter or oil
Instructions
Prepare your meat: Cook the sausage patty or bacon until fully done. Set aside.
Cook the egg: Heat butter or oil in a small non-stick skillet over medium heat. Crack the egg into the skillet. Cook until the white is set but the yolk is still slightly soft.
Fold the egg: While the egg is cooking, use a spatula to fold the edges of the egg inward to create a rough square shape slightly smaller than your tortilla.
Warm the tortilla: Place the tortilla in a separate dry skillet or microwave for 10-15 seconds until soft and pliable.
Assemble the wrap: Place the warm tortilla on a clean surface. Lay the folded egg in the center. Top with the slice of cheese and the cooked meat.
Fold the wrap: Fold the two opposite sides of the tortilla inward over the filling. Then, fold the bottom edge up over the filling and the folded sides. Roll tightly to seal the wrap into a compact cylinder shape, similar to the original.
Serve immediately.
Notes
For a softer, more pliable tortilla like the original, steam it briefly over boiling water or microwave it wrapped in a damp paper towel for 15 seconds before filling.
You can cook the egg in a ring mold if you want a perfectly square shape, but folding it works just as well.
Make the meat ahead of time to speed up your morning assembly.
