Recreate the famous Chipotle Grilled Adobo Chicken Burrito at home. This recipe captures the smoky, tangy flavor of their signature chicken marinade, perfect for assembling your favorite customized burrito.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs (about 4-5 thighs)
  • 1 tablespoon olive oil
  • 1 tablespoon adobo sauce from canned chipotles in adobo
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon onion powder
  • 1/4 cup water or chicken broth
  • For Assembly: Large flour tortillas, cooked white or brown rice, black or pinto beans, salsa (mild, medium, or hot), sour cream or Greek yogurt, shredded cheese, guacamole (optional)

Instructions

  1. Combine the adobo sauce, cumin, oregano, salt, pepper, garlic powder, coriander, and onion powder in a bowl.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Marinate in the refrigerator for at least 2 hours, or preferably overnight.
  3. Heat the olive oil in a large skillet or grill pan over medium-high heat.
  4. Remove the chicken from the marinade, letting excess drip off. Place the chicken in the hot pan.
  5. Cook for 5-7 minutes per side until the internal temperature reaches 165°F and the chicken has nice grill marks.
  6. Remove the chicken from the pan and let it rest for 5 minutes.
  7. While resting, add the 1/4 cup of water or broth to the pan and scrape up any browned bits (fond). This creates a light sauce.
  8. Dice or shred the grilled chicken. Toss the chicken lightly with the liquid from the pan.
  9. Warm your large flour tortillas.
  10. Assemble your burrito: Lay the tortilla flat. Layer rice, beans, the adobo chicken, your choice of salsa, cheese, and any other desired toppings.
  11. Fold the tortilla tightly to create your perfect copycat burrito. Serve immediately.

Notes

  • For the best flavor, use chicken thighs; they stay juicier than breasts.
  • If you prefer a smoky flavor boost, add 1/4 teaspoon of smoked paprika to the marinade.
  • Warm your rice and beans slightly before assembly for a better burrito experience.
