Ingredients
Scale
2 lbs ground beef
1 cup bread crumbs
1/2 cup milk
1/4 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1 teaspoon salt
1/2 teaspoon black pepper
1 large egg, lightly beaten
1 tablespoon Worcestershire sauce
1/2 cup ketchup (for glaze)
2 tablespoons brown sugar (for glaze)
1 teaspoon apple cider vinegar (for glaze)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan.
In a large bowl, soak the bread crumbs in the milk for five minutes.
Add the ground beef, chopped onion, bell pepper, salt, pepper, egg, and Worcestershire sauce to the bowl.
Mix the ingredients gently with your hands until just combined. Do not overmix; this keeps the meatloaf tender.
Shape the mixture into a loaf and place it in the prepared loaf pan.
In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar for the glaze.
Spread half of the glaze evenly over the top of the meatloaf.
Bake for 45 minutes.
Remove the meatloaf from the oven. Spread the remaining glaze over the top.
Return to the oven and bake for another 15 to 20 minutes, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Richard suggests using 85/15 ground beef for the best flavor and moisture balance.
If you prefer a crust, skip the loaf pan and shape the meatloaf on a foil-lined baking sheet instead.
The glaze ingredients can be adjusted to your family’s preferred sweetness level.
