Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 large yellow onions, thinly sliced
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup dry white wine
  • 2 bay leaves
  • 1 tablespoon fresh thyme leaves
  • 4 (1-inch thick) slices of baguette or crusty bread
  • 1 cup shredded Gruyère cheese
  • 1/2 cup shredded Swiss cheese

Instructions

  1. Melt butter and olive oil in a large pot or Dutch oven over medium heat.
  2. Add sliced onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are very soft and caramelized, about 45-60 minutes.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the beef broth and white wine. Add bay leaves and thyme. Bring to a simmer.
  5. Reduce heat to low, cover, and simmer for at least 30 minutes to allow flavors to meld.
  6. Preheat your broiler.
  7. Toast the baguette slices until golden brown.
  8. Remove bay leaves from the soup.
  9. Ladle soup into oven-safe bowls.
  10. Top each bowl with a slice of toasted baguette.
  11. Generously sprinkle the Gruyère and Swiss cheeses over the bread.
  12. Place bowls on a baking sheet and broil for 2-3 minutes, until cheese is melted and bubbly.
  13. Serve immediately.

Notes

  • For a deeper onion flavor, you can caramelize the onions for longer, up to 90 minutes.
  • If you don’t have white wine, you can substitute with an additional cup of beef broth.
  • Ensure your bowls are broiler-safe before proceeding.
  • For a vegetarian option, use vegetable broth and a vegetarian cheese substitute.
