Ingredients
Scale
1 large head romaine lettuce, chopped
2 large egg yolks, pasteurized or very fresh
2 cloves garlic, minced
2 anchovy fillets, mashed to a paste
1 teaspoon Dijon mustard
1 tablespoon fresh lemon juice
1/2 cup olive oil
1/4 cup grated Parmesan cheese, plus more for shaving
1 teaspoon Worcestershire sauce
Freshly ground black pepper to taste
2 cups homemade or good quality croutons
Instructions
Prepare the dressing base: In a small bowl, whisk together the egg yolks, minced garlic, anchovy paste, Dijon mustard, and lemon juice until well combined.
Slowly drizzle in the olive oil while continuously whisking vigorously. This emulsifies the dressing, making it creamy.
Whisk in the grated Parmesan cheese and Worcestershire sauce. Season generously with black pepper. Taste and adjust lemon or salt if needed.
In a large bowl, place the chopped romaine lettuce.
Pour about half of the dressing over the lettuce. Toss gently to coat every leaf evenly. Add more dressing as needed; you want the leaves coated, not swimming.
Add the croutons and toss briefly one last time.
Serve immediately, topping each portion with generous shavings of fresh Parmesan cheese.
Notes
Using pasteurized eggs is safest if you are concerned about raw eggs.
For the best flavor, make the dressing shortly before serving.
If you prefer a sharper flavor, add a few drops of anchovy oil from the tin.
