This is a hearty, classic beef chili recipe. It is a comforting one-pot meal featuring ground beef, tomatoes, beans, and warming spices. Prepare this for a satisfying family dinner or game day event.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (10 ounce) can mild red enchilada sauce
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
  3. Stir in the chopped onion and cook until softened, about 5 minutes.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Pour in the diced tomatoes, kidney beans, pinto beans, enchilada sauce, and beef broth. Stir to combine.
  6. Add chili powder, cumin, oregano, and cayenne pepper, if using. Season with salt and pepper.
  7. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For deeper flavor, simmer for 1 hour.
  8. Taste and adjust seasonings before serving.

Notes

  • Richard remembers a hint of sharpness from lime in a similar dish; try adding a squeeze of fresh lime juice just before serving.
  • We often use a mix of beans based on what we have on hand; feel free to substitute black beans for pinto beans.
  • This chili tastes even better the next day after the flavors meld overnight.
