Create a romantic and decadent chocolate molten lava cake, perfect for a special date night. This dessert features a rich chocolate cake with a warm, gooey chocolate center that oozes out with every bite.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, plus more for greasing
  • 8 ounces bittersweet or semisweet chocolate, chopped
  • 4 large eggs
  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • Powdered sugar, for dusting (optional)
  • Fresh berries, for serving (optional)
  • Whipped cream, for serving (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Generously butter and flour two (6-ounce) ramekins.
  2. Place the butter and chopped chocolate in a heatproof bowl set over a saucepan of simmering water. Stir until the butter and chocolate are melted and smooth. Remove from heat and let cool slightly.
  3. In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, and salt until well combined and slightly lighter in color. Stir in the vanilla extract.
  4. Gently fold the melted chocolate mixture into the egg mixture until just combined.
  5. Sift the flour over the chocolate mixture and fold it in until no streaks of flour remain. Do not overmix.
  6. Divide the batter evenly between the prepared ramekins.
  7. Place the ramekins on a baking sheet. Bake for 12-14 minutes, or until the sides are set but the center is still soft.
  8. Let the cakes cool in the ramekins for 1 minute. Carefully invert each ramekin onto a serving plate.
  9. Dust with powdered sugar, if desired, and serve immediately with fresh berries or whipped cream.

Notes

  • For an extra decadent touch, you can place a small square of dark chocolate in the center of each ramekin before baking.
  • Make sure not to overbake the cakes, as this will prevent the gooey center from forming.
  • These cakes are best served immediately after baking.
