Ingredients
Scale
2 cups cooked, shredded chicken
1 cup sliced carrots
1 cup frozen peas
1 cup chopped celery
1/2 cup chopped onion
1/2 cup (1 stick) unsalted butter
1/2 cup all-purpose flour
2 cups chicken broth
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dried thyme
2 pie crusts (one for bottom, one for top)
1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 400°F (200°C). Place one pie crust in the bottom of a 9-inch pie plate.
In a large saucepan, melt the butter over medium heat. Add the onion, celery, and carrots. Cook until softened, about 5 minutes.
Stir in the flour and cook for 1 minute, stirring constantly.
Gradually whisk in the chicken broth and heavy cream. Cook, stirring frequently, until the sauce thickens.
Stir in the shredded chicken, peas, salt, pepper, and thyme. Mix well.
Pour the chicken mixture into the pie crust-lined plate.
Place the second pie crust over the filling. Crimp the edges to seal and cut a few slits in the top crust to allow steam to escape.
Brush the top crust with the beaten egg wash.
Bake for 30 to 35 minutes, or until the crust is golden brown and the filling is bubbly.
Let the pie cool for at least 15 minutes before slicing and serving. You deserve this comfort!
Notes
Richard suggests using leftover roasted chicken for the best flavor.
If you prefer a deeper golden crust, you can brush the edges with melted butter before adding the egg wash.
This pie tastes best when you take a moment to remember a favorite meal.
