Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tablespoons lime juice, fresh
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8-10 flour tortillas, warmed
  • Optional toppings: salsa, sour cream, guacamole

Instructions

  1. In a bowl, toss the chicken strips with lime juice, chili powder, cumin, paprika, oregano, salt, and pepper. Let it marinate for at least 15 minutes.
  2. Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.
  3. Add the sliced chicken to the skillet in a single layer. Cook for 5-7 minutes, turning occasionally, until browned and cooked through. Remove chicken and set aside.
  4. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced onions and peppers.
  5. Sauté the vegetables for 6-8 minutes until they are tender-crisp and slightly charred.
  6. Return the cooked chicken to the skillet with the vegetables. Toss everything together to heat through.
  7. Serve the hot chicken and vegetable mixture immediately with warm tortillas and your favorite toppings.

Notes

  • Richard remembers the best fajitas always use fresh lime juice; it makes a difference.
  • For extra smoky flavor, you can add a pinch of smoked paprika to the marinade.
  • Warming your tortillas briefly on a dry skillet before serving makes them pliable and tastier.
