Ingredients

Scale
  • 1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 8 ounces dried egg noodles
  • 2 tablespoons vegetable oil, divided
  • 1 cup shredded cabbage
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 4 green onions, chopped (white and green parts separated)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce (or vegetarian stir-fry sauce)
  • 1 tablespoon dark soy sauce (for color)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)

Instructions

  1. Cook the egg noodles according to package directions until tender but still slightly firm. Drain them well and set aside.
  2. In a small bowl, whisk together the low-sodium soy sauce, oyster sauce, dark soy sauce, sesame oil, and white pepper to create the savory Asian noodles recipe sauce. Set this aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and stir fry until they are cooked through and lightly browned, about 5 to 7 minutes. Remove the tender chicken from the wok and set it aside.
  4. Add the remaining 1 tablespoon of oil to the wok. Add the carrots, cabbage, and celery. Stir fry the crispy vegetable noodles components for 3 to 4 minutes until they are crisp-tender.
  5. Add the white parts of the green onions, minced garlic, and grated ginger to the vegetables. Stir fry for 30 seconds until fragrant.
  6. Return the cooked chicken to the wok. Pour the prepared sauce mixture over the chicken and vegetables. Toss everything to coat well.
  7. Add the cooked egg noodles to the wok. Toss continuously for 1 to 2 minutes until the noodles are heated through and coated with the sauce.
  8. Pour the cornstarch slurry into the wok while stirring constantly. Cook for about 1 minute until the sauce thickens slightly and coats the noodles nicely.
  9. Stir in the green parts of the chopped green onions. Serve your homemade chicken chow mein immediately for a delicious weeknight chicken dinner.

Notes

  • For the best results when making this quick chow mein recipe, make sure your wok or skillet is very hot before you start stir-frying the vegetables.
  • You can substitute chicken breast with shrimp or tofu for a different stir fry chicken noodles variation.
  • If you want a slightly sweeter flavor in your best chow mein sauce, add 1 teaspoon of brown sugar to the sauce mixture.
