Ingredients
Scale
2 cups cooked, shredded chicken
1 cup cooked bacon, crumbled
1 (10.5 ounce) can cream of chicken soup
1/2 cup sour cream
1/2 cup milk
1 packet (1 ounce) dry ranch seasoning mix
2 cups shredded cheddar cheese, divided
1 cup cooked egg noodles or small pasta (optional)
1/2 cup panko breadcrumbs (optional topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the cooked chicken, crumbled bacon, cream of chicken soup, sour cream, milk, and dry ranch seasoning mix. Mix until all ingredients are well combined.
If using, stir in the cooked egg noodles or pasta.
Fold in 1 1/2 cups of the shredded cheddar cheese into the mixture.
Spread the mixture evenly into the prepared baking dish.
If using a topping, mix the remaining 1/2 cup cheddar cheese with the panko breadcrumbs and sprinkle over the top of the casserole.
Bake for 25 to 30 minutes, or until the casserole is hot and bubbly throughout and the topping is golden brown.
Let the casserole rest for 5 minutes before serving.
Notes
You can substitute cooked rotisserie chicken for the pre-cooked chicken.
For a lower-carb version, omit the noodles or pasta and add 1 cup of steamed broccoli florets instead.
This casserole freezes well; cool completely, cover tightly, and freeze for up to three months. Thaw overnight in the refrigerator before reheating.
