Ingredients

Scale
  • 2 cans (14.5 oz each) cut green beans, drained
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fried onions, divided
  • 1 egg, beaten
  • 1/4 teaspoon black pepper
  • Optional: pinch of garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin.
  2. In a medium bowl, combine the drained green beans, cream of mushroom soup, sour cream, milk, cheddar cheese, half of the fried onions, beaten egg, and black pepper. Add garlic powder if using.
  3. Stir everything together until well combined.
  4. Spoon the mixture into the prepared mini muffin cups, filling each about two-thirds full.
  5. Top each bite with a sprinkle of the remaining fried onions.
  6. Bake for 18-20 minutes, or until the bites are set and lightly golden brown on top.
  7. Let the bites cool in the tin for a few minutes before carefully removing them. Serve warm.

Notes

  • You can substitute cream of celery soup for cream of mushroom soup if you prefer.
  • For an extra cheesy bite, add a little Parmesan cheese to the mixture.
  • These can be made ahead and reheated before serving.
