Ingredients

Scale
  • 2.5 lbs beef chuck roast
  • 2 dried guajillo chilies, seeds removed
  • 2 dried ancho chilies, seeds removed
  • 1/4 cup white vinegar
  • 4 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 cups beef broth
  • 1 tablespoon olive oil
  • 12 corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped white onion
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Rinse the dried chilies and place them in a bowl. Cover with hot water and let them soak for 15 minutes until softened.
  2. Drain the chilies and place them in a blender with garlic, vinegar, cumin, oregano, black pepper, and salt. Blend until smooth.
  3. Rub the beef chuck roast with the chili paste.
  4. Place the seasoned beef in a slow cooker. Pour the beef broth over the roast.
  5. Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is tender and easily shreds.
  6. Remove the beef from the slow cooker and shred it using two forks. Skim excess fat from the cooking liquid.
  7. Heat olive oil in a large skillet over medium heat.
  8. Dip each corn tortilla in the reserved cooking liquid, then place it in the skillet.
  9. Sprinkle shredded cheese over half of the tortilla. Top with shredded beef.
  10. Fold the tortilla in half and cook for 2-3 minutes per side, until golden brown and the cheese is melted.
  11. Repeat with the remaining tortillas, cheese, and beef.
  12. Serve immediately, garnished with chopped onion and cilantro. Offer lime wedges on the side.

Notes

  • For extra flavor, you can toast the dried chilies briefly in a dry skillet before soaking them.
  • Adjust the amount of chilies to your preference for heat.
  • The cooking liquid is essential for the authentic birria flavor and color.
