Ingredients

Scale
  • 1 pound smoked sausage, sliced
  • 2 pounds potatoes, peeled and thinly sliced
  • 1 medium onion, chopped
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded cheddar cheese, plus more for topping
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup butter, melted

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the sliced potatoes, chopped onion, cream of mushroom soup, milk, 1 cup of shredded cheddar cheese, salt, and pepper. Mix everything gently until the potatoes are well coated.
  3. Spread half of the potato mixture into the prepared baking dish.
  4. Arrange the sliced smoked sausage evenly over the potato layer.
  5. Top with the remaining potato mixture.
  6. Pour the melted butter evenly over the top layer of the casserole.
  7. Bake for 45 minutes.
  8. Remove the casserole from the oven and sprinkle the extra shredded cheese over the top.
  9. Return to the oven and bake for another 10 to 15 minutes, or until the cheese is melted, bubbly, and lightly browned, and the potatoes are tender when pierced with a fork.
  10. Let the casserole rest for 5 minutes before serving.

Notes

  • Thinly slicing the potatoes helps them cook evenly and absorb the creamy sauce.
  • Use your favorite type of smoked sausage for different flavor profiles.
  • For extra richness, substitute cream of chicken soup for cream of mushroom.
  • This casserole reheats well the next day.
