Ingredients
Scale
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
2 large eggs
1/2 cup milk
1/4 cup champagne (or sparkling white grape juice for non-alcoholic)
1 teaspoon vanilla extract
1/4 cup popping candy (Pop Rocks), plus more for topping
For the Frosting:
1 cup (2 sticks) unsalted butter, softened
4 cups powdered sugar
1/4 cup champagne (or sparkling white grape juice)
1 teaspoon vanilla extract
Edible glitter or sprinkles for decoration
Instructions
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the softened butter and mix until the mixture resembles coarse crumbs.
In a separate bowl, whisk together the eggs, milk, champagne, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
Gently fold in the 1/4 cup of popping candy.
Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy.
Gradually add the powdered sugar, alternating with the champagne and vanilla extract, beating until smooth and fluffy.
Once the cupcakes are completely cool, frost them generously.
Immediately before serving, sprinkle the tops with additional popping candy and edible glitter or sprinkles.
Notes
For a non-alcoholic version, use sparkling white grape juice instead of champagne.
Add the popping candy just before serving to ensure it retains its pop.
Feel free to use your favorite vanilla or champagne-flavored cupcake recipe if you prefer.
