A low-carb alternative to traditional elote, this recipe uses roasted cauliflower florets coated in a creamy, spicy, and tangy dressing with cotija cheese.

Ingredients

Scale
  • 1 large head cauliflower, cut into bite-sized florets
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise or Mexican crema
  • 1/4 cup crumbled cotija cheese, plus more for topping
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder (or Tajin seasoning)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • Optional: 1 tablespoon chopped fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the cauliflower florets with olive oil, salt, and pepper on the baking sheet. Spread them into a single layer.
  3. Roast for 20 to 25 minutes, turning halfway through, until the edges are tender and slightly browned.
  4. While the cauliflower roasts, prepare the dressing. In a small bowl, whisk together the mayonnaise (or crema), lime juice, chili powder, smoked paprika, and 1/4 cup of the cotija cheese until smooth.
  5. Remove the roasted cauliflower from the oven. Let it cool for 5 minutes.
  6. Place the warm cauliflower in a large bowl. Pour the dressing over the cauliflower and gently toss until all florets are evenly coated.
  7. Transfer the coated cauliflower to a serving platter. Sprinkle generously with the remaining cotija cheese and optional cilantro before serving immediately.

Notes

  • For a smoky flavor, you can briefly broil the cauliflower for the last 2 minutes of roasting until it develops char marks.
  • If you prefer a thinner coating, add a teaspoon of water or extra lime juice to the dressing mixture.
  • Use Tajin seasoning instead of plain chili powder for an authentic tangy heat.
