You will love this Carb-Free Cloud Bread! It is incredibly light, fluffy, and the perfect keto and gluten-free substitute for regular bread. Get ready to recreate that airy texture right in your own kitchen.

Ingredients

Scale
  • 3 large eggs, separated
  • 3 ounces cream cheese, softened
  • 1/4 teaspoon cream of tartar
  • Pinch of salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, beat the egg yolks until they are pale and smooth.
  3. Add the softened cream cheese to the yolks and mix until completely combined and smooth.
  4. In a separate, clean, dry bowl, beat the egg whites with the cream of tartar and salt until stiff peaks form. You know they are ready when you can turn the bowl upside down without the whites moving.
  5. Gently fold one-third of the stiff egg whites into the yolk and cream cheese mixture to lighten it up.
  6. Carefully fold in the remaining egg whites in two additions. Be gentle; you want to keep the air in the mixture.
  7. Drop four equal mounds of the batter onto the prepared baking sheet. They will spread slightly.
  8. Bake for 20 to 25 minutes, or until the tops are lightly golden and the bread is set.
  9. Turn off the oven, prop the door open slightly, and let the cloud bread cool inside the oven for 10 minutes. This helps prevent collapse.
  10. Remove and let cool completely on a wire rack. Enjoy your wonderfully light bread!

Notes

  • Ensure your bowls for whipping egg whites are completely clean and free of any fat residue.
  • Do not overmix when folding the egg whites; this is key to achieving the ‘cloud’ texture.
  • This bread is best eaten the day it is made for maximum fluffiness.
